Valentine Steaks with Apple Glaze and Roasted Red Onions and Parsnips
Serves: 10
Ingredients:
20 lean lamb valentine steaks
For the glaze:
600ml cloudy apple juice
200ml prepared apple sauce or similar
2 Cooking apples, peeled deseeded
and chopped
8tbsp set honey
For the roasted red onions and parsnips:
1kg parsnips, peeled and cut in half lengthways
5 red onions, peeled and cut into wedges
100ml olive oil
Salt and freshly milled black pepper
4tbsp freshly chopped chives
Chives, to garnish
Fresh green salad, to serve
Method
For the glaze:
Place the apple juice in a pan with the apple sauce, apples and honey. Simmer for 5 minutes or so until reduced by half and the apples are broken down. Divide into two batches, and reserve one for service.
For the roasted red onions and parsnips:
Place the parsnips into a large non-stick roasting pan. Add the red onions and drizzle over the olive oil. Season.
Stir some of the glaze into the vegetables and roast for 30 minutes, stirring often, until golden.
To serve:
Preheat the oven to Gas mark 5, 180°C, 350°F.
Season the steaks. Stir the chives into the apple glaze and brush over the steaks.
Bake for 10 minutes, or until cooked to requirement, turning once and basting with any remaining glaze.
Serve the steaks drizzled with glaze, the roasted parsnips and red onions, and a fresh green salad, and garnished with chives.
